Salmon Cakes 
with Yogurt 
& Chive Sauce

These cakes are a great way to use up leftovers in your fridge and help reduce food waste. They could also be made with finely chopped leftover turkey. The turkey cakes would be lovely topped with some leftover gravy and a dab of leftover cranberry sauce. 

Salmon Cakes Ingredients

  • 1 cold cooked salmon filet
  • 1 cup cold mashed potatoes
  • 1 cup cold cooked brown & wild rice mix
  • 2 green onions, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 2 large eggs

Yogurt & Chive Sauce 

Ingredients

  • 1/2 cup plain yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped chives
  • 1 tablespoon lemon juice
  • Zest of one lemon
  • Combine all ingredients. 

Let sit while you prepare the salmon cakes to allow the flavours to blend.

Salmon Cakes Directions: Combine the salmon, mashed potatoes, rice, onions and bell pepper in a mixing bowl. Add one egg and mix with your hands. If the mixture seems dry add the second egg. If the mixture seems too wet add a couple tablespoons of flour or bread crumbs. Season to taste with kosher salt and freshly ground black pepper.

Heat a large skillet over medium-high heat. Add 1-2 tablespoons sunflower or canola oil to the pan. When the oil is hot take a small handful of the mixture and shape into a small patty. Fry the patties until golden brown, about 3 minutes. Flip then gently and fry on the second side for an additional 3-4 minutes. Serve immediately with Yogurt & Chive Sauce.
