Barley Soup

Serves 4

You can omit the bouillon cube and use homemade chicken or vegetable broth instead of the water if you prefer. If you have a food dehydrator, you can make your own vegetable mix or you can purchase dehydrated vegetables at Bulk Barn.

Jar Mix

  • 1/2 cup pearled barley
  • 1/2 cup mixed dehydrated mixed vegetables (potatoes, carrots, onions, leeks, red and green bell pepper, cabbage, celery)
  • 3 tablespoons mixed Italian seasoning
  • 1 teaspoon dried minced garlic
  • 1 vegetable bouillon cube 

Additional Ingredients

  • 1 – 796ml can diced tomatoes with juices

Directions: Remove wrapper from bouillon cube. Add it, plus all ingredients in the jar, to a large saucepan.  Add 4 cups of water and the tomatoes. Bring to a boil over high heat, reduce heat to low, and simmer until the barley is tender, 30-40 minutes. Add more water or broth if the soup is too thick. Serve with Parmesan cheese if desired.
