Basic Vinaigrette Salad Dressing

It’s so easy to make your own salad dressings. Different types of vinegar give you endless combinations. Try red or white wine vinegar if you like a sharp dressing. White or black balsamic vinegar give more sweetness. Rice or apple cider vinegar give a smoother taste. Citrus juices like lemon, lime or orange can be added along with half the amount of vinegar. Experiment with different types of oils too. Add in a bit of honey or maple syrup for sweetness. 

This is a simple example of a dressing that keeps well in the fridge for up to 2 weeks. Bring to room temperature before using. Good olive oil will solidify when cold. Shake well before using.

Health Benefits In general, the healthiest salad dressing is a vinaigrette, while anything with the word “creamy” is unhealthiest.

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons honey, optional
  • 1 teaspoon Dijon mustard

The usual ratio for a vinaigrette is 3 parts oil to 1 part vinegar. Combine all ingredients in a squeeze bottle or jar. Shake well to combine and taste for seasoning. If you like a sweeter dressing, add more honey. 

If you like a sharper dressing, add more vinegar or mustard. To keep your dressing from separating, add a bit of Dijon mustard. Adding garlic or chopped shallots gives the dressing more texture.
