Cauliflower Crust Pizza

Cauliflower is popular with any following low-carb diets. This pizza crust holds its shape and doesn’t fall apart when you pick it up. You must use fresh parmesan, not dried, to succeed.

Ingredients:

  • 1 large head cauliflower
  • 1/2 cup freshly grated parmesan cheese
  • 1 large egg, beaten

Directions Remove the outer leaves and wash the cauliflower. 

Cut in half and remove the stem. Place half the flowerets in a food processer and pulse until it resembles rice. Remove to a bowl and repeat with the other half. When you are finished you should have 4 cups of riced cauliflower. Alternatively, you could grate the cauliflower on a box grater. 

Place a large skillet over medium heat. Add the cauliflower and cook, stirring constantly, for 10 minutes or until the cauliflower is soft and all the moisture has evaporated. Do not rush this process. Remove the cauliflower to a large mixing bowl and allow to cool. When the cauliflower is cool add the cheese and the beaten egg. Mix well to combine. 

Pre-heat the oven to 400°F. Line a baking sheet with parchment paper. Spread the cauliflower mixture in the centre of the sheet and press gently, using your hands. Form a circle and press the edges up slightly to form a raised edge. Bake for 10-15 minutes or until the crust has set and is lightly browned. Remove from the oven and allow to cool slightly. Top with your favourite sauce and toppings. Bake for an additional 10 minutes. Serve immediately.
