Chili-Lime Mashed Sweet Potatoes

Reluctant to try sweet potatoes? Try this recipe! These mashed sweet potatoes have a nice balance of sweet and spicy. You can make them ahead, put them in a casserole dish and reheat them in the oven. If you would like a bit more heat, add a bit of cayenne pepper or more chilli powder. Smoked paprika is also a great addition. 

Ingredients

  • 4 large sweet potatoes
  • 2 – 3 tablespoons butter
  • 1 lime, zested and juiced
  • 2 teaspoons chilli powder, or more to taste
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Directions: Peel and dice the sweet potatoes and place in a large pot. Cover with cold water and add 1 tablespoon kosher salt. Stir and place over high heat. Bring the potatoes to a boil and cook until they are soft, 20-25 minutes. Drain the potatoes well and return to the pot.

Mash the potatoes with the butter. Stir in the lime juice and zest, the chilli powder and maple syrup. Taste for seasoning and serve hot.
