Cornbread Mix

Serves 4
Buttermilk powder adds a nice tang to the cornbread. You can find buttermilk powder at Bulk Barn and some grocery stores.
Jar Mix
- 1 1/2 cups cornmeal
- 3 tablespoons buttermilk powder
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon kosher salt
Additional Ingredients
- 2 large eggs
- 1/2 cup water
- 2 tablespoons sunflower oil or melted butter
- 2 tablespoons maple syrup (optional)
Directions: Preheat oven to 400°F. Butter or spray a 9-inch square baking dish or line 12 muffin cups with paper liners. Whisk together eggs, water, oil and maple syrup in a small bowl. Place dry ingredients in medium-sized bowl and make a well in the center. Stir in the wet ingredients until just blended, do not overmix. Bake for 20 to 25 minutes for 9-inch pan, 12-15 minutes for muffins, until golden brown and a knife inserted in the center comes out clean.
