Fresh Basil Pesto

Makes 2 Cups

Fresh basil is the herb traditionally used in pesto. However, if you don’t have enough basil you can add other herbs like sage, thyme or parsley. You can even add baby kale or spinach. Pine nuts can be expensive so other nuts like walnuts or cashews can be used along with the pine nuts or on their own.

Ingredients

  • 6 cups fresh basil leaves
  • 1/2 cup pine nuts, toasted
  • 1/2 cup fresh grated parmesan cheese
  • 1 teaspoon minced garlic
  • 1/2 teaspoon kosher salt
  • 1/4-1/2 cup olive oil

Directions: Place 3 cups of the basil, pine nuts,  grated cheese, garlic and salt in the bowl of a food processor or blender. Combine until the ingredients are finely chopped. Add the remaining 3 cups basil and process again. While the machine is running slowly pour the olive oil through the feed tube. Process until desired consistency.

Use immediately or store in a jar with a bit of olive oil over the top to help maintain the green colour. Pesto can also be frozen in jars or on a sheet tray and then broken into small pieces. Use in soups, stews, pasta, vegetables or as a spread for sandwiches or pizzas.
