Mini Crustless Quiches

Makes 12 Individual Quiches
These petite crustless quiches are SO good, loaded with bacon or ham, broccoli, bell peppers and cheese. A perfect make-ahead breakfast!
Ingredients
- 1 cup cooked and crumbled low sodium bacon or diced ham, optional
- 9 large eggs
- 1/2 cup milk
- 2 tablespoons chopped fresh parsley
- 2 tablespoons fresh basil, chopped
- 1 small broccoli stem, finely chopped
- 1 red bell pepper, finely chopped
- 2 green onion, finely chopped
- 1 cup cheddar, or other cheese
- Kosher salt and freshly ground black pepper, to taste
Directions: Pre-heat oven to 375°F. Generously spray a 12-cup muffin tin with non-stick cooking spray. In a large bowl, whisk together the eggs, milk, vegetables, herbs and optional meat. Season lightly with salt, and pepper. Add the grated cheese and stir to combine. Using an ice-cream scoop or 1/4 cup measure, scoop the mixture into the prepared muffin pan. Fill each to about 1/4 inch from the top.
Place in the oven, and bake for 20-25 minutes, or until the egg is fully set and the cheese has just started to turn golden on top and the quiches are slightly puffed.
Remove from the oven and let cool for 5 minutes before running a knife around each muffin and gently removing from the pan. A soup spoon works well for this.
Enjoy while warm or let cool completely before storing in an airtight container in the fridge.
