Roasted Cauliflower Mac ‘n’ Cheese

There are many different types of pasta available that have more nutrition that traditional pasta. You can find pastas made from quinoa, corn, cauliflower, amaranth, brown rice, chickpeas and red lentil. When you use alternative pastas, follow the package directions regarding cooking times.
Ingredients:
- 3 cups macaroni
- 1 large head cauliflower
- 2 tablespoons olive oil
- 1/4 cup unsalted butter
- 1/3 cup all-purpose flour
- 1 teaspoon dry mustard powder
- 3 cups milk, warmed
- 2 1/2 – 3 cups grated cheddar cheese
- 1/2 teaspoon paprika
- 1/2 cup panko or regular breadcrumbs
- 2 tablespoons butter, melted
- Kosher salt and freshly ground black pepper to taste
Directions: Preheat the oven to 425°F. Line a baking sheet with parchment or foil. Spray a 9” x 13” baking dish with non-stick cooking spray and set aside. Cut the cauliflower into small florets. Spread on the baking sheet and toss with the olive oil. Roast for 20-25 minutes or until the cauliflower is lightly browned. Remove from the oven and set aside.
Meanwhile, bring a large pot of water to a boil and salt well. Cook the pasta according to package directions and drain
Return the pasta pot to the stove and place over medium heat. Add the butter. When the butter is melted and foamy add the flour and dry mustard powder. Whisk well to combine and cook for 1 minute. Slowly whisk in the warmed milk. Stir until the mixture has come to a boil and the sauce has thickened. Remove from the heat.
Gradually stir in 2 1/2 cups of the shredded cheese. Taste the cheese sauce and season with salt and pepper if needed. Fold the cooked macaroni and cauliflower into the cheese sauce. Scrape the mixture into the prepared baking dish.
Combine the breadcrumbs and paprika in a small bowl. Stir in the melted butter to coat the crumbs. Sprinkle the crumbs over the casserole. If you don’t want to use breadcrumbs you can add extra cheese. Bake at 425°F for 20-30 minutes or until golden and bubbly. Let stand 10 minutes before serving.
