Makes 4 servings

  • 1 lb. ground chicken or turkey
  • 1 carrot, chopped or grated
  • 2 stalks celery, chopped
  • 1 small onion, chopped
  • 1-2 garlic cloves, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • ¼- 1/3 cup hot sauce
  • 1 cup tomato sauce
  • 1 cup chicken stock
  • 4 hamburger buns
  • ½ cup blue cheese
  • 1 large dill pickle, chopped
  • Olive oil

In a saucepan, add oil and cook ground meat over medium heat until cooked through, breaking up meat as it cooks. Drain grease if needed. Add the carrots, celery, onion, and garlic, season with salt and pepper.
Combine the vinegar, brown sugar, Worcestershire, hot sauce, tomato sauce and stock in a measuring cup and pour over the mixture in the saucepan. Mix thoroughly and simmer a few minutes more. Toast the buns under the broiler. Pile the mixture onto the buns and top with blue cheese and chopped pickles.

Enjoy with a side salad.
