Spirit of Food — Three Sister’s Soup (Creamy Vegetarian Version)

This recipe is very versatile; you can add any other vegetables you like.


  • 1 Butternut squash cubed (skin left on)
  • 3 – 4 cups Lyed corn* (1/2 bag) or yellow corn, or hominy (rinsed well)
  • 2 cups cut green beans
  • 6 cups vegetable broth or water
  • ½ tbsp. ground ginger**
  • ¼ cup pumpkin seeds

Directions: Add broth or water and squash in a large pot, bring to a boil. Cook for 20 minutes. or until squash is tender. Remove from heat. Puree in a blender or use an immersion blender until desired consistency is reached. Return to heat and add corn and green beans. Cook for 20 – 30 minutes.
** Add ginger 5 minutes before soup is done (if using). Add a sprinkle of pumpkin seeds on top of each bowl, and serve.
*You can substitute frozen yellow corn You can flavour with your favourite herbs and spices: ** ginger goes really well with this soup.
