Spirit of Food: Wild Rice, Bean and Veggie Salad

Ingredients
- 3 cups cooked wild rice
- 1 can black beans, drained
- ¼ cup finely chopped onion or 2 stalks chopped green onion
- ½ English cucumber, diced
- ½ cup chopped celery
- 1 chopped red, green, yellow, or orange
- bell pepper
Directions: Drizzle with Italian salad dressing to moisten thoroughly, or use a homemade dressing using the following ingredients:
- ¼ cup light olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp balsamic vinegar
- ½ tsp to 1 tsp honey
Whisk together well and drizzle over salad. Yummy. Substitute any vegetables you’d like. So delicious!
