Spirit of Food: Wild Rice, Bean and Veggie Salad

Ingredients

  •  3 cups cooked wild rice
  • 1 can black beans, drained
  • ¼ cup finely chopped onion or 2 stalks chopped green onion
  • ½ English cucumber, diced
  • ½ cup chopped celery
  • 1 chopped red, green, yellow, or orange
  • bell pepper

Directions: Drizzle with Italian salad dressing to moisten thoroughly, or use a homemade dressing using the following ingredients:

  • ¼ cup light olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp balsamic vinegar
  • ½ tsp to 1 tsp honey

Whisk together well and drizzle over salad. Yummy. Substitute any vegetables you’d like. So delicious!
