Sugar-Free Frozen Peaches

  • 1 kg tree-ripened Niagara peaches
  • 1 tablespoon lime juice

Directions:  Line a large baking sheet with parchment paper and set aside. Fill a bowl with water and ice.

Bring a pot of water to a boil. Using a small paring knife, slice an “X” into the bottom of each peach. Using a slotted spoon lower the peaches into the boiling water.  Remove after 30 seconds and place in the ice water. Allow the peaches to cool and peel the skin off.

Slice the peach around the middle ridge and remove the stone. Slice the peaches and place in a mixing bowl. Toss with 1 tablespoon lime juice.

Arrange the peaches on the parchment-lined baking sheet and place in the freezer for 1-2 hours or until frozen solid. Pack the peach slices into bags and freeze for up to six months.
