White Bean Salad — with Mint

This simple, refreshing salad uses ingredients you probably have on hand.
It serves four as a side salad — or two as a main dish — and keeps well in the fridge for two or three days. The resting time is important to develop the flavour.

Ingredients:
- 1 – 540 ml (19 oz.) can white kidney beans, drained and rinsed
- 1/2 medium red onion, finely diced
- 3 tablespoons white balsamic vinegar
- 1 cup diced cucumber (about half English cucumber)
- 1/2 cup diced red bell pepper (1 small pepper)
- 3 – 4 tablespoons chopped fresh mint leaves
- 2 tablespoons extra virgin olive oil
- Kosher salt and freshly ground black pepper to taste
Directions : In a serving bowl combine the diced red onion and white balsamic vinegar. Let the mixture sit for 15 minutes to take the sharpness from the raw onion. Stir in the drained and rinsed beans, chopped mint, diced red bell pepper and olive oil. Add salt and pepper to taste. Let stand one hour before serving.
