Wild Rice Salad or Side Dish

The components of this salad will keep in jars or bags and don’t require refrigeration. Once the additional ingredients are added, you will need to refrigerate the dressing and the
finished salad.
SERVES 4 – 6
Trail Mix Ingredients
- 1/4 cup dried cranberries
- 1/4 cup unsalted corn nuts
- 1/4 cup unsalted pumpkin seeds
- 1/4 cup unsalted sunflower seeds
Dressing Dry Ingredients:
- 1 teaspoon dried parsley
- 1/2 teaspoon dried onion
- 1/2 teaspoon mustard powder
- 1/2 teaspoon dried orange peel
Salad Ingredients
- 1 cup wild rice
Dressing Wet Ingredients
- 1/2 cup sunflower oil
- 1/4 cup cider vinegar
- 1/4 cup maple syrup
Directions: Prepare the dry components of the trail mix and dressing mix. When vou are ready to make the salad add the sunflower oil, vinegar and maple syrup to the dressing mix jar.
Shake to combine. Set aside to allow flavours to blend Rinse wild rice well in a strainer under running water. Place the rice in a large saucepan with a lid. Add 3 cups of water. Bring to a boil and lower heat to medium-low. Simmer for 45-60 minutes or until tender. Drain if necessary and keep any liquid as a stock for soup.
Set the rice aside to cool.
Combine the wild rice. trail mix and 4 tablespoons of dressina in a servina bow. Stir to combine. Taste and season as desired Serve cold or at room temperature. Keep the remaining dressing in the fridge for up to 1 week.
