Spirit of Food — Bean Dip with Vegetables and Pita Wedges

Ingredients:

  • 1-19 oz can black beans, drained and rinsed
  • 1 lime, juiced
  • 1-12 oz can corn, drained
  • 2 cups salsa, homemade or jar
  • ¼ cup cilantro
  • 1 cup plain yogurt
  • 1 cup cheese, shredded
  • 1 whole wheat pita, cut into wedges
  • 1 red, yellow, or orange pepper, cut into strips
  • ½ medium cucumber, cut into coins
  • 1 stalk celery, cut in strips

Directions:
1. Combine bean, lime juice, canned corn, salsa and cilantro into a large bowl.
2. In small serving bowls, layer ¼ cup bean mixture with 2 tablespoons of yogurt and 2 tablespoons of cheese.
3. Wash and prepare raw vegetables for dipping.
