Spirit of Food: Black Bean and Mango Salad

Ingredients

  • 1 (190z/540 mL) can black beans rinsed well and drained
  • 1 mango, peeled, pit removed and diced
  • 1 sweet red bell pepper, diced
  • 2 green onions, sliced
  • ¼ cup (50 mL) fresh lime juice
  • 2 tbsp. (15 mL) vegetable oil
  • 1 tbsp. (15 mL) soy sauce
  • ½ tsp. (2 mL) red pepper flakes
  • ¼ cup (50 mL) chopped fresh cilantro

Directions:
In a medium bowl, combine beans, mango, red pepper and green onions. To make dressing, whisk together the lime juice, vegetable oil, soy sauce and red pepper flakes. Add dressing to bean mixture
and toss. Add the cilantro and toss lightly. Serve and enjoy this colourful rainbow of goodness!
